
Blogging for blogging.. nothing deep this time...
Day 4.. Monday.. new week. Woke up not motivated but it’s now 3:30 and I’ve managed to changed my vibes and feel more happy pumped and positive really. I want to remember the last wknd I just had. Friday… helped my mom and sister setup for a surprise engagement party for my baby brother that’s getting married on August 15th this year!!! Than it was quite late but that when “’Huss173” connected and the conversation we had was WOW! So weird to connect on so many levels on so many topic with someone… Anyway, thank you girl (if you read this you’ll know it’s you and that’s your new nickname HUSS173) Saturday was all about getting some rest and later the party. Went really well. I Should add some pics of that on here (that’s an idea) Sunday.. church and than mom’s house dinner and than the gym…
I must say one think about the gym.. I am really proud of myself. Last week I worked out every single say!! Yeah…. And plus Sunday so that was 6/7.. this week the goals is definitely 7 days and some days I wanna workout twice! Overall this month I wanna see 30 pink stars on my calendar at home.
It’s official. Going to Jamaica June 4th to the 13th. Not doing the resort think. Going to stay over with a friend. She is going for 2 weeks and me one… well a lil over one… I’ve never been. All last year I was dreaming about going and the opportunity presented itself just like that. Pure miracle cause that friend we never used to talk like much.. and since like February or something we got reconnected and boum the trip came to be reality.
Now I must visit my CCOR friends in the Netherlands!!! This year! I also want to go to Cuba again. Than Montreal a few times and than New York city, Maryland and Buffalo.
I am at work.. got to go back… GOAL is to list my intentions for the next 100 days (100-4) TONIGHT!!!

Recipe of the week - Papaya & Pineapple Muffins
Here is a great muffin recipe that you can enjoy for breakfast or as a snack.

1 1/2 cup whole-wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/2 cup canned crushed pineapple, drained
1 cup cubed papaya
1/3 cup yogurt
1/4 cup of egg beaters, or egg whites
2 tbsp unsweetened applesauce
1/4 cup Splenda
1/4 cup honey
1/4 cup walnuts
1/4 cup raisins, chopped
Preheat oven to 375°F.
In a large bowl, whisk together flour, baking powder, baking soda, and cinnamon.
In a food processor or blender, purée pineapple, papaya, and yogurt. Mix in egg beaters, applesauce, Splenda, and honey.
Combine pineapple and flour mixtures; fold in walnuts and raisins.
Lightly spray 12 paper-lined muffin tin with fat free cooking spray. Spoon in batter. Bake for 20 to 22 minutes or until tops spring back when lightly touched.
Cool on a wire rack. Note: the muffins tend to stick to the sides of the paper until they are completely cooled. Serves 12.
