Some of you are talking about simple ways to prepare a dish that sound really good. Let's collect them here!
This might be a bit crazy to other people, but the one dish my body loves and craves the most is one I've named "Chicken Christine" because I haven't found it anywhere else~ I just customized it to what I thought sounded good!
Chicken pieces (I like drumsticks!)
Orange juice (from concentrate is good)
Bran flakes ~ I use about 1 cup per drumstick
A little olive oil
(No, really!~ It's really good! It doesn't taste like "orange juice", per se, it just tastes really good!)
Dip the pieces of chicken in orange juice.
If it's made from concentrate, you can control how much water it has it in~ I like to make the mixture a bit strong by adding about 3/4 to 1/2 the water called for.
But fresh orange juice, if you can get it?....Oh, my, my, that sounds wonderful!
(Let the chicken soak in the orange juice overnight for a real infusion of flavor!)
Put the bran flakes in a ziplock bag or some kind of clean bag. Crush the bran flakes in the bag until most of them are nearly crumbs~ the smaller the better!
(I like lots and lots of bran flakes, so I put a liberal amount in the bag.)
Put the chicken pieces in the bag, one to two pieces at a time, and shake to coat the chicken with the bran flakes.
Line a baking dish with aluminum foil, give it a thin coat of olive oil, and set the chicken pieces in there, puttng them close together. When they're all in the pan, pour the leftover bran flakes on top. I add even more bran flakes from the box, because I love the bran so much!
Bake at about 350 degrees F for about an hour and 15 minutes or so, depending on your oven. Cover the chicken with the aluminum foil a bit, if you don't like crunchy crust!
The orange juice and the bran and the chicken all together is just this impossibly good combo to me! I end up craving it all the time, and I feel really good after eating it, I suppose because of the nutrients in the recipe.
